Step 1
You will need 3 cups of cooked jasmine rice for this recipe.
Step 2
Heat 1 tablespoon of peanut oil and 1 teaspoon of sesame oil in a wok or large frying pan over medium heat.
Step 3
Add
1 finely chopped brown onion and 1 peeled, finely chopped carrot and
cook for 1 to 2 minutes until just softened but not coloured.
Step 4
Add
200 grams of beef or pork mince and cook, stirring with a wooden spoon
to break up any lumps for about 3 to 4 minutes until the meat has
browned.
Step 5
Add 1 cup of bean sprouts, 1 teaspoon
hot chilli sauce, 2 tablespoons tomato sauce and 2 tablespoons kecap
manis or sweet soy sauce, 2 cups shredded iceberg lettuce and 3 cups
cooked jasmine rice and cook for a further minute, stirring to ensure
everything is well combined. Turn off heat and cover the wok partially
with a lid while you cook the eggs.
Step 6
Heat 1
teaspoon of peanut oil in a non-stick frying pan over medium heat.
Carefully break 2 eggs into the pan and fry until cooked to your liking.
Set aside. Repeat the process with an additional 2 eggs.
Step 7
Stir half a cup thinly sliced green shallots and 2 tablespoons chopped coriander into the rice.
Step 8
Spoon into serving bowls. Top with an egg and extra coriander.
Step 9
Serve nasi goreng with extra chilli and soy sauce.
